Summer Peach Salad with Basil Vinaigrette
Looking for a summer salad that brings together the sweetness of peaches, the freshness of herbs and the tanginess of citrus? This recipe is Chef Gabe Kennedy approved!
Ingredients
- 2 peaches - cut into wedges
- Mixed Herbs of Citrus Lace, Basil, Mint, ShishoBasil Vin
- 1/2 shallot roughly chopped
- 2 cups tightly packed fresh basil leaves - stems removed (about 4 ounces)
- 1 clove of garlic
- 1 tsp honey
- 1/2 cup olive oil
- 2 tbsps lemon juice
- zest of 1 lemon
- 1 tsp kosher salt
Method
- Blend ingredients (except basil leaves) together
- Then add basil and puree till smooth
- Assemble on the bottom of the plate place a few spoons full of vinaigrette,
- Layer the peaches and herbs on top!
